
Citrus Spiced Pancakes
For the Pancakes
- 100 grams Pancake Premix
- 2 eggs
- 120 ml milk
- 2 tsp cinnamon
- ½ tsp mixed spice
- ½ tsp cardamom
- 1 zested orange
Blueberry Chia Compote
- 1 cup blueberries
- 2 tsp chia seeds
- 2 tbsp orange juice

Combine all the pancake ingredients together and mix.

Spoon mixture into a greased frying pan and cook on medium heat.

Flip when edges are dry and pancakes are golden.

For the blueberry chia compote, add all the ingredients into a small sauce pan and cook on medium heat until desired consistency.

Serve with plain yoghurt or coconut yoghurt, thin slices of orange, activated buckwheat or other crunchy bits and some nuts or seeds, BOOM!
