
Apple Cinnamon & Cacao Nib Muffins
- 1 apple, finely chopped
- 2 tbsp vanilla essence
- 2 tsp cinnamon
- 120g Vanilla Protein Oats
- 1 egg
- 90 ml milk
- ½ cuo cacao nibs (or choc chips)
- 2 tbsp erythritol (or any other sweetner)
- ½ tsp baking powder
- pinch of salt

Preheat the oven to 180 degrees and line a muffin tray.

Finely chop one apple and place into a microwave safe bowl.

Add 2 tbsp vanilla essence and 2 tsp cinnamon and mix to combine.

Place in microwave for 2 minutes 30 seconds and set aside to cool.

In a separate bowl, combine 120g Vanilla Protein Oats, 1 egg, 90ml milk of choice, 1/2 cup cacao nibs, 2 tbsp erythritol, 1/2 tsp baking powder and a pinch of salt.

Mix to combine.

Add your cooked apple and stir.

Transfer to the lined muffin tray and bake at 180 degrees for 15 minutes.

Serve warm with some butter or coconut yoghurt!
